I’m going to tell you straight up that any recipe that only has four ingredients (5 if you count the green onions but those are optional), is a MAJOR win in my book and that’s why this quick and easy recipe for Four Ingredient Easy Chicken Salad is a go-to favorite in the Miller household.

But before I get into the recipe I have to talk about our weekend first because, WOW, was it a doozy. Is that how you spell that word by the way — doozy? I don’t know but I’m just going with it because I like the use of the word doozy when referring to my weekend because like I said – WOW, it was a doozy. This weekend we had four baseball games, two basketball games, two sleepovers, I threw two birthday parties for my boys, AND we attended an adult birthday party as well. It was no freaking joke and I’m exhausted but seeing the smile on those boy’s faces when they had all their friends over for a paintball extravaganza and a game truck/flag football party — it made it all worth it. I can’t even believe that my boys are 12 and 8 years old and I’m finding it darn near impossible to think about it without breaking down into ugly tears. Then, Facebook had to go and do one of those Time Hop things and show me a two-year-old Coco Miller with those blonde curls and that perfect little lisp he had, on his second birthday, standing in his barstool jumping up and down saying—”I HAPPY! I TWO!”  Why must you torture me Facebook TimeHop…WHY?!?! Tonight, I forced both my boys to snuggle with me and give me hugs when all they really wanted to be doing was playing their new video games and guess what – I zero feel bad about it. I also am not scared at all to guilt trip them and remind them that I gave birth to them when they don’t want to snuggle with me. I have no shame and I will totally force them to snuggle with me when they are eighteen years old too, because I’m their momma, and I can.

Moving on from me being a disaster about my boys getting older. NO, I’m still not talking about the chicken salad. Be patient and I will get there, I promise. Alright NOW I’m ready to talk about the Easy Chicken Salad Recipe that’s one of my favorites to make all year long but especially in the Spring and Summer. One time years and years ago I went to a friend’s house for a playdate and she made some yummy chicken salad. I never got the actual recipe from her but I did get the secret ingredient – Brianna’s Poppyseed dressing. All you need to make life changing chicken salad is grapes, chopped celery, chicken, and Brianna’s Poppyseed Dressing. Here’s what you need:

3 cups of chicken, shredded (I buy a Rotisserie Chicken and shred it)

2 cups of purple grapes, cut into halves

3/4 cup chopped celery

1/2 cup chopped green onion (optional)

1/2 to 3/4 cup Brianna’s poppyseed dressing

Mix together. Chill. Serve with Wheat Thins or on Croissants. ENJOY!
